Thyme is aromatic with a slight pine/mint/lemon flavour and a floral aroma.  It is an important ingredient in bouquet garni, and it’s flavour also compliments herbs such as rosemary and sage. It is often present in stuffings for chicken/turkey or lamb as well as in marinades for roasted/grilled meats, fish or vegetables.
